Whole Wheat Macaroni and Cheese

Ingredients
2 cups whole wheat macaroni2 1/2 cups cheddar cheese, grated1/4 cup parmesan cheese, grated2 Tbsp butter2 Tbsp flour2 cups milk1 Tbsp chopped shallots or onion1 bay leaf1/4 tsp paprika1 slice wheat bread toasted and crushed into crumbs
Directions
Cook macaroni according to package directions. In large saucepan, melt butter. Whisk in flour and cook over medium-low heat for 3 minutes, whisking constantly.
Gradually whisk in milk. Stir in shallot, bay leaf and paprika. Simmer gently, stirring often for 15 minutes. Remove from heat. Stir in 2/3 of cheese. Season with salt and pepper as desired. Stir in macaroni. Mix well.
Pour half of macaroni mixture into 1 1/2 qt. baking dish. Top with half of remaining cheeses. Pour on remaining macaroni and then remaining cheese.
Top with fresh breadcrumbs and spray lighly with buttery spray (Such as "Ican't believe its not butter spray") if desired. Bake at 350 for about 30 minutes. Let stand for 5 minutes.
