Barbecued Chinese Chicken Lettuce Wraps

Ingredients
1.25 lbs. chicken breast2 tbsp. olive oilCoarse Salt and Pepper3 cloves of garlic, chopped1 orange, zested2 cups of mushroom (subs. zucchini)1 Yellow Pepper8oz of water chestnuts3 tbsp of Hoisin Sauce1/2 large head iceberg lettuce
Directions
Preheat large skillet or wok. Add oil to hot pan. Add chicken for ~2minutes. Add zuchinni and cook for another minute or 2. Add salt and pepper to season, then garlic. Cook a minute more. Grate zest into pan, add bell pepper bits, chopped water chestnuts, and scallions. Cook another minute continuing to stir fry mixture. Add Hoisin sauce and toss to evenly coat mixture. Cook for another minute and than serve with iceberg lettuce leaves.
