black bean sweet potato

Ingredients
1 sweet potato baked 5 in. loong1/2 black beans1/4 C. low-fat or fat-free shredded cheddar cheese
Directions
bake swwet poato in microwave for 7-8 mins. or until done.

Cut potato open long way and place 1/2 black beans into potato and top with 1/4 cheese place back into micorwave until hot and cheese is melted.

serves one person.

    I made this using Kuner's Cumin and Lime flavored black beans. I added some tomato that I had around (diced it and set it on top). I didn't find the cheese added much for me, so the second time I made it I skipped it. If I was using plain black beans I might add cheese. - 10/29/07
