Zucchini Cakes

Ingredients
1 lb. zucchini grated (about 2 med.)1 tsp. old bay seasoning1/4 tsp. salt1 tbsp. Best Foods light mayonnaise1 tbsp. chopped parsley1 tsp. baking powderDash black pepper1 egg, beaten2 slices bread 2 Tbl 1% Milk
Directions
Grate and squeeze excess moisture from zucchini. Sprinkle with salt and allow to drain in colander for 30 minutes. Break bread into small pieces and moisten with milk. Mix all above ingredients. Shape into small cakes and saute in nonstick pan sprayed with PAM until lightly brown.
