Copy Cat - Breakfast bowl

Ingredients
2 - cup egg substitute1/2 of a 1 lb. - bag frozen potatoes(diced)1/2 - cup chopped onion1/2 - cup chopped green peppers 1- cup shredded cheddar cheese3- tablespoons of real bacon bitscooking spray salt and pepper to tastegarlic powder to taste1- teaspoon dried parsley flakes
Directions
Saute the onions and peppers in sprayed nonstick skillet, till almost tender on low heat , covered( aprox. 5 minutes), add potatoes, turn up the heat to medium, you may need to re-spray the pan, cook till potatoes are tender and slightly brown (aprox. 15 minutes). Add egg sustitute, salt , pepper and garlic powder , stirring continuously, till eggs are set . Pour into 8x8 casserole dish, sprinkle with cheddar cheese and bacon bits,sprinkle with parsely flakes. Bake at 350 for 25 minutes. Run knife through the casserole and cut into 4 pieces. Serves 4.
