Tofu stir fry

1/2 T canola oil1 lb firm tofu cut into 1 inch squares1 red bell pepper, sliced1 lg carrot, sliced1 med onion, sliced1 c mushrooms, cut into bite-sized pieces1 c snow peasMinced garlicMinced ginger3 T oyster sauce2 T light soy2 T rice vinegar1/2 T sesame oil
Cut all the veggies and tofu, mince the garlic and ginger.
Mix oyster, soy, vinegar and sesame oil in a small bowl.
Heat the oil in a wok. Stir fry the garlic and ginger 1 minute or until fragrant, not brown. Add the ingredients in this order, stirring 1-2 minute between additions: onion, carrot, mushroom, pepper, tofu, snow peas. After 1 minute add sauce and stir well to mix and heat. You can add a teaspoon of cornstarch mixed with 2 T of water to thicken if you want. Serve over brown rice.
Serves 2 hungry, 3 not so hungry people.
