Eggplant Pizza

Ingredients
1 Eggplant - Peeled and sliced1 tbsp Olive Oil1 c. Fresh Mushrooms, sliced1/2 c. Green Peppers, chopped2 sausage patties, cooked and crumbled8 oz Mozarella Cheese
Directions
1. Heat oven to 425 degrees

2. Brush sliced eggplant with olive oil, cook in oven for 10 minutes on first side and 12 additional minutes after flipping eggplant over.

3. Move eggplant to bottom of 9 x 13 pan. Cover with pizza sauce.

4. Top with green pepper, mushrooms, and sausage.

5. Top with Mozarella. Cook for 10-15 minutes, or until cheese is completely melted.

    Sounded better than it tasted. I do like eggplant, and so does my son. He doesn't want me to make it again. I think it has possibilities but will have to experiment some. - 8/5/08

    I modified these for one person.

    4 slices of eggplant
    1 slice of part skim mozzarella
    1/4 C of Ragu Chunky Primavera Pasta Sauce
    1/2 of a Ball Park Turkey Dog
    Ground Pepper
    Pam Cooking Spray

    They were delicious and very low on all counts, except vitamins and fiber! - 7/30/08
