Ingredients
Flour, white, 1.75 cup Raw sugar, 4 tsp Baking Powder, 2 tsp Salt, 0.5 tsp (remove)So Good 'Trim'Soymilk, 1.25 cup Egg Replacer, 1 serving Applesauce, unsweetened, 25 grams Strawberries, frozen, unsweetened, 0.125 cup, Blueberries, frozen (unsweetened), 0.125 cup, Blackberries, frozen (unsweetened), 0.125 cup, Raspberries, 0.125 cup (remove
Directions
Makes 12 muffins.

Preheat oven to 400 degrees. Spray a 12-cup muffin tin with non-fat cooking spray.

In a large bowl, combine all dry ingredients.

In a smaller bowl- combine applesauce and soy milk.

Chop the frozen berries into a manageable size

Add wet ingredients to the dry, and stir to combine, adding berries as you mix


Using a 1/4 cup measure, scoop into prepared muffin tin (they should be about 2/3 full) , bake for 20-25 minutes (when a toothpick inserted comes out clean).

Cool in tin for 5 minutes, then turn out to cooling rack

serve warm.

    I just made these, and they are very good. I used cupcake lines, which did not work really well. The sprayed pan is probably better. We tried the leftover batter as a waffle, and it was fantastic. It came out moist and with a good flavor with a little maple syrup. Even my husband liked them! - 11/30/08

    I tried it and I admit I'm not much of a cook but I loved em, Excellent, I especially like the fact they have no cholesterol. I left the frozen blackberries out though because I couldnt find any and really dont care for em. Thanks for a great recipe! - 10/5/08

    The berries really add to the flavor of this recipe.
    25g of Applesauce is approx. 1 1/2 Tablespoons.
    I wiped a very small amount of oil on the muffin tin and they held together beautifully even though I had to scrape them out with a knife.

    I did a pretty close version of these with what I had in the house. I used liners, but that didn't work out to well. They stuck to the paper liners, so spray in the tins is probably the best way to do it. Also, they have a pancake texture and I'm curious to see if this will work as a pancake recipe? - 12/2/13

    These have become a staple for me. I bake a batch on Sunday and have two a day for a filling but low cal snack. I only use blueberries and decreased the amount of berries to 3/4 cup. These aren't overly sweet, but warmed up with a bit of I can't believe it's not butter spray and they're very good. - 2/3/09
