L.R. banana nut granola

4 cups quick oats4 cups oat bran4 cups puffed brown rice2 cups unsweetened coconut2 cups sliced almonds1/4 cup virgin coconut oil3 T. butter, melted1 cup nonfat dry milk2/3 cup sugar1/3 cup boiling water1 cup brown sugar1 T. vanilla1 T. banana flavoring1 cup buttermilk8 oz. banana chips
Preheat oven to 270. In a large bowl, combine oats, oat bran, puffed brown rice, coconut and almonds. In a blender place melted butter, dry milk, sugar and boiling water. Blend, scraping the sides until smooth. Pour into a saucepan. Add coconut oil, brown sugar, vanilla, banana flavoring and buttermilk. Heat and stir until sugar is melted and mixture is smooth. Pour over dry ingredients in bowl. Mix well; using hands if necessary. Divide into 2 greased 9"x13" baking pans. Bake at 270 for about 1 hour and 20 minutes, stirring every 30 minutes or so. Remove from oven and place into a large bowl. Mix in crushed banana chips. Cool, stirring occasionally. Makes about 19 cups.
