Maple Pecan Glazed Sweet Potatoes

Ingredients
1 Cup crystal light lemonade or apple juice4 tsp cornstarch1/2 cup sugar-free maple syrup1/2 tsp cinnamon1 Tbs butter or margarine1/8 tsp salt2 lb sweet potatoes (about 3 large), peeled, cut into 3/4-inch cubes (about 5 cups)2 tbs chopped pecans
Directions
1. In small bowl, combine 2 tablespoons of the apple juice and cornstarch; mix well. Set aside.
2. In large nonstick skillet combine remaining apple juice, syrup, cinnamon, margarine and salt; mix well. Bring to a boil. Add potatoes; stir to coat well. Return to a boil. Reduce heat; cover and simmer 10 minutes or until potatoes are tender.
3. Stir cornstarch mixture into potato mixture; cook and stir over medium-high heat until bubbly and thickened. Spoon into serving bowl. Sprinkle with pecans.
Yield: 8 (1/2-cup) servings
