Ingredients
Shelly's Zucchini Pancakes1 Zucchini, grated1/2 cup Ricotta Cheese1/4 cup Whole Wheat Flour (I use Arrowhead Mills Multigrain Pancake Mix)1/2 teaspoon Oregano1/4 teaspoon Onion Powder1 Egg, beaten 1/4 cup Parmesan, grated1/2 teaspoon Kosher Salta few twists of Black Pepper1 tablespoon Olive Oil or Butter Combine all ingredients but oil. Heat oil in pan. Drop dollops of zucchini mixture into pan and cook in batches. Flatten with a spatula and cook about three minutes each side till golden. Makes 8.

    Goof recipe, low in fat. Did not use oregano but used parmesan cheese with red pepper. I like it only asked for one egg and the Ricotta just made them perfect, more than I was
