Raisin Bran Muffins

Ingredients
1 1/4 cups raisin bran1 1/4 cups milk1 1/2 cups flour1/2 cup applesauce (or oil)1/2 cup sugar1 egg1 Tblspn baking powder
Directions
Stir together flour, baking powder, sugar and set aside. Place cereal and milk in mixing bowl, stir to combine. Let stand 1 to 2 minutes until cereal is softened. Add eggs and oil. Beat well. Add sifted dry ingredients to cereal mixture, stirring only until combined. Pour into 12 greased 2 1/2" muffin pan cups. Bake at 400 degrees for about 25 minutes or less. The original recipe calls for oil, but I sub in applesauce to lower the fat and/or add yogurt for moisture.
