Spring Salad Mix Stir Fry

2 Tablespoons olive oil1 cup of diced celery1 1/2 cup diced zucchini1 cup of fresh, sweet red peppers2 medium red tomatoes, quartered and then halved2 medium yellow tomatoes, quarterd and then halved2 cups Organic Baby Spring Salad Mix with herbs1 Tablespoon instant minced onion flakes1 Tablespoon anise1 Tablespoon garlic powder
In a skillet, heat olive oil over high heat. Add the diced celery, saute for one minute. Add zucchini, peppers, tomatoes, minced onion flakes, and garlic powder; cook until nearly done. Add the 2 cups of spring salad mix and anise seed. Cook until the greens are hot.
Sitr the mix and serve warm.
