Pineapple Salsa

3 cups chopped pineapple2/3 cups fresh cilantro leaves1 red bell pepper, finely chopped1/2 cup red onion or sliced scallions2 tbsp jalapeño chile pepper, finely chopped2 tbsp ground or grated ginger8 drops Tabasco sauce (to taste)dash of salt
Place 3 cups of the pineapple in a blender and process until pureed.
Add the cliantro and process for 10 to 15 seconds.
Place in a bowl.
Stir in the remaining 3 cups chopped pineapple. Stir in the bell pepper, scallions or red onion, chile pepper, ginger, Tabasco sauce and salt.
Will keep up to a week covered and refrigerated. Makes about 4 servings of 1 cup each.
