Marinated raw Vegetables

Ingredients
2 or 3 peppers (I prefer red, orange or yellow, but green is a possibility)1 medium sized zucchini4 or so carrots1 large red onionhalf a cup of raw cane sugarone small bottle or rice vinegar - really any type of vinegar will do, what is your favourite flavour?4 tbsps of oil - sesame is nice, but again, any kind will doA generous sprinkling of tarragon (leaves not ground)A generous sprinkling of basil
Directions
Chop your veggies into long, thin pieces. Mix them together in a large tuperware. Add the whole bottle of vinegar, oil, sugar and spices. Fill with water until veggies are completely covered in liquid. Stir it up. Set in your fridge. Should make about 10 servings to use in various ways (be creative). Will last a long time.
