Spinach Turkey Salad with Fruit

Ingredients
1/4 Cup red currant jelly 3 Tablespoons red wine vinegar 8 Cups spinach leaves, washed, drained, torn and chilled 8 Ounces COOKED TURKEY, chopped 1 Cup strawberries, washed, drained, sliced and chilled 1 11-Oz. Can Mandarin oranges, well drained 3 Each green onions, chopped
Directions
1. Combine jelly and vinegar in saucepan and cook over low heat, stirring constantly, for a couple of minutes until smooth. Chill in freezer for 10 minutes.

2. In a large salad bowl, combine spinach leaves, chopped turkey, 1 cup raspberries, oranges and green onions.

3. Pour dressing over the mixture and toss. Serve immediately.

Makes 4 servings (2 cups spinach and 2 oz cooked turkey)
