5 whole eggs, beaten3 egg whites,beaten3 cups 1% milk4 oz 50% fat white cheddar cheese, shredded 4 oz part skim mozzarella cheese, shredded2/3 pkg of Oscar Meyer Bacon Pieces3 lg fresh carrots, chopped in processor1 small can mushrooms, chopped in processor1 large red onion, chopped/sauteed in cooking spray2 cups frozen broccoli pieces, thawed & chopped1/2 cup frozen corn1/2 cup brown rice1 large tomatoe, sliced in 8 slicesI also added various seasonings to my liking. They included salt, pepper, cumin, seasoned salt and many others. I put so many things in who knows. I like to season the way that sounds good at the time. Just do it the way you like it!
Mix everything together in a bowl well except tomato. Spray large glass pan with cooking spray. Pour mixture into pan. Gently arrange the tomato slices on top. Bake for 60-75 minutes (depending on your oven). Cool. Enjoy!
Top with fat free sour cream or black bean and corn salsa!! Yum!
