African Yam and Peanut Soup

Ingredients
8 cups Vegetable Stock1 large onion, chopped6T minced garlic5 cloves minced garlic1T cumin2T coriander1/2 t cayenne1t paprika1 red pepper diced4 yams, peeled and chopped3 tomatoes, seeded, peeled and chopped (or substitute 1/2 a 15 oz can)5T natural peanut butter4T lime juice
Directions
Makes 6 large servings

- Saute the onions in a large dutch oven with non-fat cooking spray until soft. Add the diced red pepper and the yams. Add your seasonings (to taste- add and omit if you like)

- Add vegetable stock, cover and bring to a boil. Reduce to a simmer, and add the tomatoes and peanut butter. Simmer for 30 minutes.

-Puree all or half of the soup, returning to pot- add lime juice and simmer 10 more minutes

This soup can be garnished with crushed dry roasted peanuts, cilantro leaf and extra lime juice, although no garnishes are included in teh calorie count.
