No-Bake Graham Cracker Cheesycake

Ingredients
Low-Fat Graham Crackers8 oz. fat free cream cheese (softened)1 cup cold skim milk2 Tblsp. lemon juice1 small box instant vanilla pudding (sugar free)8 oz. fat free Cool Whip1 can lite cherry pie filling (or any flavor)
Directions
Line the bottom of a 9 x 13 pan with whole graham crackers. Beat the cream cheese until smooth. Add milk and lemon juice to the cream cheese and beat until smooth. Stir in pudding mix, then fold in Cool Whip.

Spread 1/2 of cream cheese mixture over graham crackers. Repeat with another layer of graham crackers and cream cheese mixture. Spread pie filling over top.

Refrigerate overnight for graham crackers to soften. Enjoy :)

    This is great! I made individual servings in a muffin pan...15 in all. I lined the muffin tins with the aluminum type of liners...instead of graham crackers I put one lowfat nilla wafer in the bottom of each liner...topped with the cheesycake mixture & then topped with chopped fresh strawberries! - 5/4/09

    OH MY DEAR SWEET LORD !!!.....I made this with cottage cheese instead of cream cheese.(the beating smoothed out the lumps) Fool me once....fool me twice....fool me over and over again with this recipe !

    I made this, but being the only person in my house wanted it to last so I didn't add any fruit topping and stuck it in my freezer. I cut a serving out and top it with fresh strawberries or frozen blueberries and it's wonderful plus I enjoy it more because it's frozen I can't just scaft it down!! - 1/14/09

    This was awesome! I used sugar free fat free jello cheesecake pudding instead of vanilla, and covered the top with fresh red raspberries. Next time, I plan to use one reviewer's suggestion and substitute cottage cheese for the cream cheese. This one is a winner, and goes in the recipe box. Thanks! - 3/12/09

    This is a fantastic recipe, I made it with blueberry filling! I did notice that only 16tbsp of cool whip was used to calculate the nut. info. Normally that would be correct, but for cool whip free 1, 8oz tub has about 50 tbsp (25, 2tbsp servings). Not trying to be mean, just thought you should know. - 10/8/08

    As I was scanning through the comments, I was thinking how delicious it would be with the chocolate pudding, and saw yours with the white chocolate pudding! Yumm! I'm going to try variations on this now!

    My sons and I really enjoyed this recipe.Next time, I will reduce the lemon juice to 1.5 TBSP as it was a bit too tart for us.

    Tasted pretty good. It seemed a little heavy on the graham cracker by doing 2 layers. I think I'll try just 1 layer next time. I also used lemon fat-free, sugar-free pudding instead of vanilla and skipped the pie filling. - 2/2/09

    This was delicious! I made it exactly as it was written, no substitutions. The only thing I would change is the pie filling though, I didn't like the sugar free pie filling.     This is a great recipe. I only put crackers on the bottom and served fresh fruit on the side. I had used cottage cheese and soy milk instead of cream cheese and milk. My husband said he likes it better than traditional cheesecake because it is refreshing rather than too rich. - 8/19/09
