Boiled Carrot Muffins

Ingredients
2 cups grated carrots 1/3 cup All-Bran cereal1/3 cup packed brown sugar 2 cups water 1/2 cup Crasins1 cup cake flour 1 1/2 cups whole-wheat pastry flour3/4 cup Splenda granular1/2 tsp cinnamon 1/4 tsp nutmeg 1/2 tsp ground ginger1/4 tsp salt 1/2 tbsp baking powder 2 tsp baking soda
Directions
Preheat oven to 350F, grease 24 muffin cups.
Combine carrots, All-Bran. brown sugar, water, and Craisins in a saucepan.
Simmer for 15 minutes and remove from heat.
Let stand, covered, 4 hours.
Whisk remaining ingredients together in a bowl.
Add the carrot mixture, stirring until just combined.
Bake 12 minutes, then cool in tins 10 minutes before un-moulding.
