Sugar Free Cheesecake

Ingredients
1 cup crushed pecans1/2 stick melted butter2 pkgs. softened reduced fat cream cheese3 eggs2 tsp. vanilla20-25 pkgs. sugar substitute (I prefer to use Splenda or 2 different types of sugar substitutes.)
Directions
To make crust, line pie plate with chopped pecans. Pour melted butter over pecans and form a crust. In bowl, beat eggs well. Add cream cheese, vanilla and sugar substitute. Beat mixture until creamy. Pour cream cheese mixture over pecan crust. Bake at 350 degrees for 30 - 40 minutes until center of cheesebake starts to crack slightly. Chill in refrigerator. Serve with fresh fruit as desired.

    I make this recipe frequently- great for my diabetic son and good for our family. I use stevia packets- they are 2 gram size packets. Also try almond extract instead of vanilla and use ground almonds for the crust. I add a packet of stevia to the almonds and butter- chill before eating! Yum! - 9/18/12
