Allie's Tomatoe Basil Soup

4 cup Red Ripe Tomatoes peeled and chopped 1 cup Onions chopped 4 clove Garlic, minced2 cup (8 fl oz) Chicken Broth (I use homemade, no sodium)3 Tbsp Fresh Basil, chopped2 Tbsp Butter, unsalted2 Tbsp white flour1 Tbsp Olive oil
Heat oil, add onion and garlic saute for 30 sec. Add tomato, and broth. Bring to a boil, reduce heat simmer for 20 minutes.
Add basil, let cool slightly. Then with a submergible blender bend until smooth (you can use a regular blender, but becareful blending hot liquids in a blender).
In a small pot melt butter, add flour making a roux. Wisk in some soup gradually to prevent lumping then add mixture to soup. Enjoy!
Makes 3~1 cup servings.
