Ian's "To Die For" Stuffed Peppers

Ingredients
1 1/2 lb ground turkey (approx.)1 pkg taco seasoning1 Tbsp butter3 LARGE bell peppers, tops and seeds removed1 cup sliced fresh mushrooms1 cup chopped onions1 oz mozzarella cheese, grated1 oz cheddar cheese, grated1/2 cup enchillada sauce
Directions
Saute mushrooms and onions in butter in saucepan. At same time (in seperate pan), brown ground turkey.
With heat OFF, mix veggies, turkey and taco seasoning.
Pour in enchillada sauce.
Grate cheese and mix types together.
Stuff gutted peppers with with mixture and top with 1/3 of the cheese mixture.
Place in glass baking dish and bake at 350 for approximately 20 min. (or until cheese melts and sauce starts to bubble over edge of pepper).
Slice peppers in half from top to bottom to serve.
Optional: top with low-fat sour cream and/or additional cheese (not included in calorie calculation).

    REALLY REALLY good! Very easy to make (even for someone like me who isnt great in the kitchen!) - I could have probably baked them a bit longer but they were still awesome. I made a little extra of the meat/veggie mix to make lettuce wraps later! - 9/7/12
