Pan Fried/Poached Basil Salmon

Ingredients
1 filet of salmon (4-6 ounces)1 tsp basil1 tsp Oregano1.5 T lemon juice0.3 c. chicken broth1.5 tsp. olive oil
Directions
Place olive oil in non-stick pan. Coat salmon with basil and oregano. Salt and pepper may be added as well. Place in pan and add lemon juice over filet. Cover and pan fry one side of filet for about 3 minutes. Turn over. Add chicken broth to pan around the filet. Simmer another 3 minutes. Turn filet and test for doneness. Should be done in about 10 minutes total depending on thickness of the filet. Flakes when done. Add some vegees and couscous and it makes a wonderful quick meal.
