1 boneless, skinless chicken breast (about 5 oz)1 TBS Olive Oil.5 Cup Onion1 jalapeno pepper1 Lime (juice from)3 Cup Zucchini (2 medium)2 Cup Eggplant (1 medium)1 Can Sweet Corn1 Can Cream Style Sweet Corn 1 Can Purple Hull Peas1 15 oz can Hunt's Tomatoes SauceMcCormick Grill Mates – Roasted Garlic & Herb1 Bay LeafSeasoning to TasteWhite PepperCayenne PepperBlack PepperMrs. Dash Seasoning BlendMcCormick Salt Free All Purpose Seasoning Hot Pepper Sauce
Cut chicken into small bite sized pieces. Sprinkle with McCormick Grill Mates.
Saute chicken, onion, and jalapeno in olive oil. As chicken begins to turn from pink to white, squeeze the juice of one lime over the chicken mixture. Add all other ingredients. Bring to boil and reduce heat to low for 40 minutes. Stir frequently.
