Grilled Steak with Blue Cheese Sauce

2 pound round steak Salt Pepper 2 tablespoons butter 3/4 cup onions, chopped 2 tablespoons flour 1 1/2 cups milk 1.25 cups gorgonzola cheese, crumbled
Prepare a grill or heat broiler. Season steak lightly with salt and pepper. Grill or broil steak uncovered, turning once, 16 to 18 minutes for medium rare.
Meanwhile, in a medium saucepan over medium heat, melt the butter. Add onion and 1/2 teaspoon each salt and pepper and cook, stirring often, until soft, about 7 minutes. Stir in the flour and cook 2 minutes longer. Gradually whisk in milk and cheese and cook, whisking, until sauce is thick, about 5 minutes.
Transfer meat to a grooved cutting board. Let stand 5 minutes. Slice steak into 1/3 inch thick slices diagonally against the grain. Transfer meat to a serving platter and serve immediately with the warm cheese sauce on the side.
