Chicken with brandied apricot sauce

Ingredients
Chicken Breast, no skin, 2 breast, bone and skin removed (remove)Mushrooms, fresh, 1 cup, pieces or slices (remove)Onions, raw, 1 medium (2-1/2" dia) (remove)Chicken Broth or Bouillon, 1 cup (8 fl oz) (remove)Apricots, dried, 12 half (remove)Nutmeg, ground, 0.25 tsp (remove)Cornstarch, 10 grams (remove)Brandy, 1 oz (remove)
Directions
brown chicken in oil spray (pam)
add muchrooms and onion.
cook unrtil soft
add broth apricot, peppers and nutmeg (1 min)
cook through on min (covered 8 min)
mix cornstarch and brandy thicken for 1 min
serve with spinach fettuccini

    I changed it up a bit. No pasta for one thing. Browned the chicken then cooked the chicken in the broth, onion, salt and pepper only. This would also be nice with cream, egg yolks and brandy for the sauce. It wouldn't be as healthy though. - 5/13/13
