# Arugula, 3 cup# Baby Greens, 3 cup # *Peaches, fresh, 1 large # *Balsamic Vinegar 1/2 cup# Olive Oil, 1 tbsp# *Pine Nuts, 1/4 up# Strawberries, fresh, 1 cup, halves
Soak greens in acidified water for 10 minutes while preparing fruit and dressing.
Wash fruit well and slice into small chunks
Put olive oil into small skillet with pine nuts and quickly brown nuts over medium high heat until just beginning to brown, stirring as they brown.
Remove from heat and pour balsamic vinegar over nuts to cool, stirring as it bubbles and cools.
Drain and dry greens and place in large bowl, well-mixed.
Pour fruits over greens.
Pour nuts and balsamic over fruits.
Very pretty and yummy.
