Slow Cooker Simple Chicken and Potato Soup

6 Chicken Thighs, remove bone, skin, fat6 Medium Potatoes, rinsed and diced2 Large Red Bell Peppers16 oz Low Sodium Chicken Broth and waterSalt and Pepper to taste
Dice Potatoes, Peppers and put in slow cooker
Remove fat, skin and bone from chicken thighs, place thighs in slow cooker
Pour Chicken broth (canned or made from boullion) on top, usually to cover the ingredients. Use water to bring the level up to the tips of the chicken.
Allow to cook while you are out for the day, 4 hours on HI or 6 - 8 hours on LO, depending on how soft you would like your potatoes
Get creative with this base! It's a great go to recipe when you don't have a lot of time or inclination to cook.
