Baked Tilapia w/ Peppers & Onions

Tilapia, 16 oz (~4 slabs of fish)1/2 red bell pepper, strips1/2 green bell pepper, strips1/2 yellow bell pepper, strips1/2 onion, strips~ 3/4 cup carrot, thin strips1/2 cup White Wine4 tsp olive Oil1/4 cup lemon juice2 tsp lemon peel, grated2 tsp black pepper1 tbsp salt1 lemon, 2 slices per fish piece
Cut the vegetables into strips.
Mix the olive oil, lemon juice, & white wine. Pour into large baking dish. Add vegetables, and toss to coat with oil mixture. Place fish on top of vegetables.
Mix lemon peel, salt, and pepper. Season the fish. Place 2 lemon slices on each fish piece.
Cover dish and bake @ 350 for 20-25 minutes.
