Apple Cinnamon Strucel Cake

Ingredients
4 cups chopped peeled and cored apples3 cups flour4 tsp. baking powder1 1/2 cups sugar1/2 cup brown sugar2 tsp. ground cinnamon2 eggs1 1/2 skim milk1 stick margarine
Directions
Makes 25 2 inc squares.

Prepare a 10 X 10 inch high side pan -- 1 1/2 inch high or better.

Peal and core and chunk the apples. Sprinkle cinnamon and a small amount of brown sugar -- will make the recipe calories higher -- and mix in a bowl. Set aside.

Blend margarine, sugar, brown sugar, cinnamon and eggs until well mixed. Add milk and reblend. Add flour 1 cup at a time and mix. Put into the well greased pan and then place apples on the top, distributing evenly. Pour the juices evenly on the top as well. Place in a 375 degree oven for 1 hour and 15 minutes or until a tester in the center comes out clean. Edges will be brown and crispy and apples will have folded in.
