Cucumber Black Eyed Pea Salad

Ingredients
3 tbsp Olive Oil1 Lemon's Juice2/3 cup Green Bell Peppers, chopped3 Cucumbers, peeled seeded and chopped1 (14 oz) can Black-Eyed Peas, drained4 oz Goat Cheese, crumbled1/4 cup Red Onion, sliced thin1 tsp Oregano, groundSalt & Pepper to taste
Directions
Whisk oil, lemon juice, oregano, salt and pepper in a large bowl until combined. Add cucumber, black-eyed peas, bell pepper, cheese, and onion; toss to coat. Serve at room temperature or chilled.

Makes 6 servings, approx. 1 cup each.
