Grilled Eggplant Sandwiches

Ingredients
2 fresh eggplants, 6-7 in. long1/4 tsp. salt1 T. olive oil1 T. lemon juice1/4 tsp. garlic powder1/2 tsp. sage1/4 tsp. ground pepper2 oz. Pepper Jack cheese, sliced thin
Directions
Line a baking sheet with paper towel. Peel and cut the eggplant into slices about 3/4 in. thick so that you have 16 slices. Sprinkle both sides with salt and spread out on the baking sheet. Cover with more paper towel and let stand.
In an hour, preheat the Foreman grill. Rinse & pat dry the eggplant slices.
Mix together the olive oil, lemon juice and seasonings. Brush mixture on each slice of eggplant. Place brushed side down on grill & brush the mixture on the other side. Lower grill lid & grill for about 8 minutes. Make into "sandwiches" using thin slices of cheese between slices of eggplant. Let stand until cheese melts while grilling the remaining slices of eggplant. Continue to make sandwiches & serve warm.
Makes 8 sandwiches. A serving is 2 sandwiches--a larger one and a smaller one.
