Mick's Ratatouille

Ingredients
3 cloves of garlic (or more if you like)-mincedone large onion-diced1/2 cup of shredded carrots2 large celery stalks- cut in small pieces3 medium zucchini - cut in small pieces3 medium tomatoes- cut in small piecesZatarain's Creole Seasoning ( or spicy seasoning of your choice)Grated parmesan cheeseExtra light Olive oil, approx. 2 tbsp.Fresh parsleyItalian Seasoning
Directions
Put olive oil into large skillet on med-high heat. Add minced garlic, onion and shredded carrots. Cook for couple minutes so flavor in infused in oil. Add celery and zucchini and cooked for approx. 8-10 minutes till celery and zucchini start to soften, stirring frequently. Add in tomatoes and parsley, and Italian Seasoning. Season with Creole seasoning to taste. Cook till tomatoes heat up and flavors combine, stirring frequently.
Top with grated parmesan cheese and enjoy!
