Chocolate Mousse

One 12 oz. box soft silken tofuOne 12 oz. bag dark chocolate chips, or equivalent chocolate bars, squares, etc. The better the chocolate, the better the mousse! One teaspoon pure vanilla extract
Melt chocolate in microwave or double boiler -- be careful not to burn it! Put tofu and vanilla in blender or food processor; process until smooth. Slowly add melted chocolate while machine is running; mix until well-blended.
Spoon into individual serving cups (shot glasses, mini-cupcake papers, little ramekins, teacups - whatever!). Cover and refrigerate until firm. Keeps for at least a week!
Great served with fresh raspberries or strawberries.
You can easily half or even quarter the recipe and use the rest of the tofu for something else.
