Pumpkin Zucchini Raisin Bread

Ingredients
1.5 C Shreaded Zucchini1 C Pumpkin3 C Wheat Flour3/4 C Egg Substitute1 C Splenda1/4C Splenda Brown Sugar1 T Vanilla1 T Cinnamon1/2 t Nutmeg1/2 t Clove1 t Baking Powder1 t Baking Soda1/2 C Applesauce (unsweetened)1 C Raisins1/4 C Almonds (slivered)
Directions
Recipe makes 2 loaf pans with 10 slices per loaf and 1 slice per serving.

Preheat oven to 350
In mixing bowl combine egg substitute, zucchini, pumpkin, applesauce, and vanilla.

Combine all dry ingredients and gradually add to zucchini mixture.

Fold in raisins and almonds.

Bake at 350 for 45-50 minutes or until toothpick inserted in center of loaf comes out clean.

    This turned out really great! I found after making it a second time that it mixes better if you finely grate the zucchini to release more of the moisture. (I used the little hole side on my grater instead of the big holes.) Thanks for the tasty and nutritious recipe! - 1/28/09
