Ingredients
1lb of ground hamburger, browned 1/2 cup onion 1 tbs minced garlic, drained1 lg can stewed tomatoes or two smaller cans1 can of corn, drained1 can of hominy, drained1 sm can of diced green chilies1 can of Ranch Style Beans (or pinto and/or kidney work too)1 cup of cooked barleySalt and Pepper to taste
Directions
You may cook the barley ahead of time and put it in with the indgredients when ready. Brown the meat in a large pot (we use a dutch oven), add about a 1 tablespoons of minced garlic and half a cup of chopped onion to the mix. Chop up the stewed tomatoes in a food processor. If you don't have a food processor using them as is out of the can is fine too but It will just make it really chunky. Combine the rest of the ingredients including the barley. Cook until heated through. You may want to add water if it is too thick.

Goes well with corn chips like Fritos but that's optional. I like a little Tabasco sauce on mine as well.

    Hominy is a form of corn grits. Kind of like big kernels of corn without husks. Though you may learn more from the Wikipedia article.

    This is my kind of meal -- everything in one pot, easy to fix, nutritious, low cal, low glycemic carbs. Liked it very much. Added some cyenne pepper, left tomato diced. Added jce. from corn, made a soup-like consistency. Would be good w. cornbread. - 9/25/08

    Very easy and very filling! I didn't bother cooking the barley seperately, I just added some extra water and cooked it with everything else. Super easy clean-up, too. - 9/17/08
