Hot Spinach Salad Dressing

1/3 cup extra virgin olive oil1/2 c chopped pecans1/2 c dried cranberries1/2 c balsamic vinigar1 cup fresh chopped tomatoes1 tsp Italian spices
Put 1 tbs of olive oil in skillet, add pecans. Cook until toasted and add cranberries and saute until they are soft. Add remaining ingredients cooking until to tomatoes are soft and well cooked. Serve on bed of fresh spinach. (I top with 1 tbs chopped boiled egg. This is not part of the calories listed.)
