4 boneless, skinless chicken breast halves (about 1 pound)1/2 cup all purpose flour1 tsp cayenne peppersalt and pepper, to taste2 large eggs6 cups coursely chopped cornflakesI can't belive it's not butter spray
Preheat oven to 375 degrees. Line a rimmed baking pan with foil. Place chicken inside large ziploc bag and with a rolling pin, ound chicken to even out thickness. Mix flour, cayenne pepper, salt and pepper. In a 2nd dish, whisk eggs. Spread cornflake crumbs on another plate. Dip chicken into seasoned flour, turning to coat, then dip in egg mixture. Remove chicken, allow excess egg to drip off, then press both sides into cornflakes. Transfer to baking sheet. Discard remaining flour, egg and cornflakes. Spray chicken with butter spray. Bake until coating is crips and chicken is cooked through, about 30 minutes. Makes 4 4-oz servings.
