Cauliflower Cheese Pie

Ingredients
Potato Crust:2 firmly packed cups grated raw potato1/2 tsp salt1 large egg, beaten1/4 cup grated onionPie:2 large eggs1/4 cup milk3/4-1 tsp. salt1/4 tsp freshly milled black pepper3 T. unsalted butter1 cup chopped onions1 garlic clove, finely minced1 medium cauliflower, broken into SMALL florets2 T chopped fresh parsley1 1/2 tsp chopped fresh basil or 1/2 tsp dried3/4 tsp chopped fresh thyme or 1/4 tsp dried1 3/4 cups grated cheddar cheesePaprika
Directions
Potato crust:
Placed potatoes in colander set over a bowl; toss with salt and set aside for 10 mins. Squeeze out excess water. Combined drained potatoes with egg and onion in medium bowl. Pat mixture into oiled pie pan, building up sides of crust. Bake 35-40 mins til golden brown, brushing crust with oil after 1st 20 mins to cris[.

Pie filling:
Preheat oven to 400. oil 9" pan. Prepare and bake crust. Reduce oven to 350 when crust is done. Meanwhile, beat eggs, milk ,1/2 tsp salt, pepper in small bowl. Set aside.
Melt butter in large skillet. Add ionions, garlic, and 1/4-1/2 tsp remaining salt. Cook, stirring frequently, til lightly browned. Add cauiliflower, parsley, basil and thyme. Cook, covered for 10 mins., stirring occasionally. Remove from heat.
Over crust, layer 1/2 the cheese, then the cauliflower mixture, then the remaining cheese. Pour the milk mixture over the top and lightly dust with paprika. Bake 35-40 minutes til set.

    I substitute potato for kumera (sweet potato) and also add a tbsp of wholegrain mustard to the cauliflower adds extra flavour - 3/31/11

    This is a great dish I make often. Have also done it with leftover rice as the bottom crust. Now have done it with grated yams replacing the potatoes. Wonderful! - 6/14/10
