A.R. Quiche Lorraine with Polenta Crust

Ingredients
1/4 cup plus 1/8 cup quick cooking polenta cooked with 3/4 cup water 3 large eggs 1 cup 2% milk 1 cup heavy whipping cream 1/2 tsp salt 1/2 tsp pepper 1/8 tsp nutmeg 1/4 cup plus 1/8 cup chopped onions 1 link chicken sausage chopped finely
Directions
Spread the cooked polenta evenly in the bottom of a 9' tart pan and pat in place if necessary. Whisk together the eggs, milk, cream, salt, pepper, and nutmeg. Set aside and sprinkle the crumbled sausage and onion evenly over the crust. Pour in the egg mixture and bake in a 375' degree oven for up to 30 minutes or until a knife inserted in the middle comes out clean. Let set 15 minutes before serving. Yield 8 servings.

    This is awesomely good!!! I love a good quiche and this is one of the best I've ever tasted. The polenta crust is low fat and tastes very good with the filling which is like a barely set rich custard. - 9/17/08
