Whole Wheat Banana Oatmeal Cookie

Ingredients
1 cup whole wheat pastry flour1/2 tsp baking powder1/2 tsp baking soda1/4 tsp salt2 tbsp butter, soft1/2 cup brown sugar1/4 cup mashed ripe banana1/2 cup diced banana1 egg1 tsp vanilla extract1 tsp ground cinnamon1 1/2 cup rolled oats
Directions
Preheat oven to 350F and line a baking sheet with parchment paper.

In a small bowl whisk together flour, baking powder, baking soda and salt.

In a large bowl, cream together the butter and the sugar. Beat in egg and banana, followed by the vanilla extract and cinnamon. By hand, add in the flour mixture. Stir in the oats and diced banana.

Drop dough by tablespoonfuls onto prepared baking sheet. Spread out dough into round, flat cookie shape with back of spoon. This is to ensure that cookies will have crispy edges and a soft middle.

Bake for 11-14 minutes at 350F, until set and lightly browned.

Let cookies cool for about 5 minutes on the pan before transferring them to a wire rack to cool completely.

Makes 2 dozen cookies.

    These were good cookies. I liked the bits of chopped bananas, without them the cookies would have been too dry. Flattening them was a must, giving the edges a crispness. Reminded me of banana bread in a cookie form. My kids liked them and I will make them again. - 6/3/09
