1 cup cooked Brown Rice1 cup cooked bulgur1/4 cup julienned canned or pickled beets1/4 cup chopped raw scallions1/8 cup slivered toasted almonds1/4 head red leaf lettuce3 tbsp rice wine vinegar.25 grated carrot4 oz. grilled or poached chicken breast, no skin
If you want to make this quickly, use all bulgur which cooks faster. While the brown rice and bulgur are cooking, chop and wash all the veggies (except lettuce) and combine in a bowl. When the rice and bulgur are done, add them, while still warm, and add the rice vinegar. Toss to combine.
Put torn lettuce leaves on a plate. Top with rice mixture. Garnish with shredded poached, grilled, or roasted chicken and toasted almonds on top.
