Roasted Potato Salad

Ingredients
Potatoes:2 tsp olive oil1/4 tsp salt4 lbs small red potatoes, quarteredcooking spray1/2 cup scallions, chopped (green onions)1/4 cup parsley, chopped4 bacon slices, cooked and crumbledVinaigrette:2.5 tbsp balsamic vinegar1 tbsp Dijon mustard2 tsp olive oil1/2 tsp pepper1/4 tsp salt
Directions
Preheat the oven to 450 degrees

To prepare the potatoes combine the olive oil, salt and potatoes. Arrange evenly on a baking sheet coasted with cooking spray. Roast the potatoes for 25 minutes, turn them over and roast for 10 minutes longer. Combine potatoes with onions, parsley and bacon.

To prepare the vinaigrette, combine all of the ingredients in a bowl and whisk together or put all of them into a jar with a tight fitting lid and shake. Pour the vinaigrette over the potatoes.
