Pineapple-Shrimp Appetizers

Ingredients
1 can (8oz) Dole crushed pineapple in juice, drained1 can (4.5oz) shrimp, rinsed and drained1/4 cup reduced fat mayonnaise1 Tbsp minced green onions(scallions)2 tsp Dijon mustard1/2 tsp dill weed2 cucumbers
Directions
Combine all ingredients except cucumbers in medium bowl. Cut cucumbers in 1/8-1/4 inch thick slices. Spoon heaping teaspoon of pineapple mixture on top of each slice. Garnish with additional dill or minced green onion, if desired.
Makes 30 appetizers
