Ingredients
*Flour, white, 1.5 cup Eggplant, fresh, 1 eggplant, peeled (yield from 1-1/4 Milk, nonfat, .5 cup *Canola Oil, .25Salt, 1 tsp Pepper, black, .25 tsp *Pepper, white, .25 tsp
Directions
1. Peel & slice eggplant and put in large bowl filled with water and with tablespoon salt. Let soak ( put another bowl with water in it on top to keep eggplant down in the salt water.
2. In small bowl mix floor, milk, 1/2 tsp salt, black and white pepper.
3 in pan heat oil. Coat eggplant piece with flour mixture and fry until golden drain remove and drain.
