Low Fat Apple Bran Muffins

Ingredients
3/4 C Wheat Bran1/2 C low fat buttermilk or skim milk1/2 cup all-purpose flour2 Tbls packed brown sugar1/2 tsp baking soda1 egg white 1/4 apple, grated
Directions
In small bowl, combine bran & buttermilk. Set aside to soak for 10 mins.
Preheat oven to 350oF (175oC).
Lightly grease/spray pan or use paper liners
In large bowl, mix together flour, brown sugar & baking soda. Stir in bran mixture & egg whites. Fold in grated apple. Divide batte into 12 muffin cups.
Bake in preheated oven for 16 - 18 mins. or until toothpick inserted into center comes out clean.
Allow to cool for 5 mins. before removing from pan
