HONEY DIJON CHICKEN

2 TBSP FLOUR3/4 TSP SALT1/4 TSP PEPPER6 BONELESS SKINLESS CHICKEN BREASTS (3 0Z EACH)2 TBSP HONEY2 TBSP DIJON MUSTARD1 TBSP OLIVE OIL
Preheat oven to 350.
1. In a wide bowl, combine flour, salt, and pepper. Coat chicken with mixture. In a small dish, combine honey and mustard, set aside.
2. In a skillet, heat olive oil over medium heat; quickly brown chicken on both sides. Place on GREASED baking sheet; spread with honey mixture. (Using your hands works best) Bake in preheated oven for 10-15 minutes until chicken is no longer pink inside.
Makes 6 servings.

This recipe was really good with a lil kick. I left out the flour and sauteed it on top of the stove. I didn't get to add my veggies, but I used Zatarains Yellow rice..I ate brown but the hubby and the kids have not got used to brown rice yet..I will add to my list of recipes. - 12/13/11
