Ingredients
1 tbsp Olive oil2 small onions, chopped4 cloves garlic, minced1 tbsp ginger, minced2 jalapeno peppers, chopped1.5 tsp tumeric1 tsp cumin1 tbsp coriander1 tsp chili powder2 lbs stewing beef1 tsp salt19 oz. canned tomatoes1 cup coconut milk
Directions
Saute onions in oil until soft. Add garlic, ginger, peppers and spices and heat through. Add beef and brown. Add salt and tomatoes and simmer for 1-2 hours in beef is tender. Add 1 cup of coconut milk and heat until thickened slightly. Serve over rice.
