Number of Servings: 8

Ingredients

    Curry powder, 4 tbsp
    Yogurt, plain, low fat, 1 cup (8 fl oz)
    Onions, raw, 3 medium (2-1/2" dia) Sliced thinly
    Red Ripe Tomatoes, 2 large whole (3" dia) finely diced
    Olive Oil, 4 tbsp
    Rabbit Meat, 32 oz cut into bite sized chunks

Directions

Heat oil in a non stick skillet, add in onions and fry until golden
Add Rabbit chunks and cook a few minutes.
Add in yogurt, tomatoes, and curry powder, stir well and cover...let simmer on low for about an hour or until the meat is tender.
Serve over rice.
